Better (& Much Easier) Than Apple Pie?

Need a quick snack or dessert for the holidays? Short on time? Here’s a solution for you. Slice up a few apples, toss in some sugar and spice, and pop open a can of crescent rolls and your ready to go! What could be better than crescent rolls and apples? These bundles are debatably better than apple pie! Make more with less!

Ingredients:
1 Can of Crescent Rolls
3 Apples
1 Tbsp Cinnamon
2 Tbsp Sugar
1 Tbsp Melted Butter

Slice apples into thin slices and mix with sugar and cinnamon. Pop open crescent rolls and slice each rollin half. Place apple slices on one end of the crescent and roll up with the rest of the roll.  Brush top of rolls with butter, sprinkle with cinnamon and sugar, and bake at 350 for 20 minutes or until rolls golden brown and done baking. Enjoy!

Make Your Own… Pumpkin Spice Latte!

So YOU voted and I responded, and here it is… finally… the pumpkin spice latte! This delicious fall/ winter treat can now be made in the comfort of your own home and with minimal cost (compared to $5 at Starbucks). This recipe is very simple and can be adjusted to suit the drinker. More sugar, less spice- however you like it! Even if you don’t have an espresso machine (like me) you can easily sub the espresso for stronger coffee… using coffee makes it technically not a ‘latte’, but it still tastes like one! With a few ingredients and a few minutes, you’ll be whipping up the perfect treat for a chilly windy day like today, what could be better!

Ingredients:
2 cups milk
2 Tablespoons pumpkin
2 Tablespoons sugar
2 Tablespoons vanilla
1/2 teaspoon spices, mostly cinnamon, a dash of nutmeg & cloves
1-2 shots espresso or strong coffee (amount= however you like it)

Tip: Because the pumpkin is real, there is a small amount of texture in the end result, so if this sounds unpleasant to you, try using a pumpkin flavored type of coffee syrup.

Honey Tofu Chili

Don’t be scared… I’m not typically a huge fan of tofu either, but this IS delicious! This hearty chili is perfect for the coming fall and winter; if only it was a little cooler outside. This is most definitely a recipe that will be repeated many times in my apartment this season.

Ingredients:
14 oz Soft tofu
Green pepper
Onion
Olive oil
2 Cloves garlic
3 cans of Beans [whatever you like]
28 oz Diced tomatoes
8 oz Tomato sauce
1 tsp Cumin
1/2 tsp Oregano
2 Tbsp Chili powder
2 Tbsp Vinegar
2-4 Tbsp Honey
Few Tbsp brown sugar

A quick box of cornbread is a great partner for your chili! Have fun!
